Welcome to Five Day a Week Vegan!
This blog is primarily a recipe sharing space. I have been experiment with vegan cooking for about six years. I have progressed from tofu and frozen veggie stir-fry to full four course meals. With much patience, trial and error, and guidance from cookbooks, I feel like I am finally getting a grasp on the basics. This provides the opportunity to get a little creative with vegan cooking, making it less of a task, and more fun!
Why five days a week? I strongly believe in the health benefits of a plant based diet. Physical health and energy are my primary reasons to eat vegan. I know there is a wide range of vegan lifestyles out there, the blogosphere is full of examples, and I am looking forward to joining that spectrum. In my area of the spectrum, I enjoy the occasional short rib or scoop of ice cream.

Sunday Brunch Bananas Whiskey Foster Pancakes
Serves 4 15 minutesIngredients:
1 TBSP Vegan Buttery Sticks
1 C Whole Foods Wholewheat pancake mix
2/3 C Soy Milk
1 TBSP Canola oil
1 TBSP Vegan Buttery Sticks
2 TBSP Brown sugar
1 Tsp Cinnamon
1/2 Tsp nutmeg
2 Bananas, sliced
1 shot of whiskey Walnuts (optional)
Start two saute pans on medium heat, with 1 TBSP of vegan buttery sticks in each saute pan. Prepare pancake batter: Stir with wooden spoon the pancake mix, soy milk and canola oil. Add brown sugar to one saute pan, stirring often. Pour pancake batter by 1/4 C scoop into the other saute pan. When brown sugar starts to slightly bubble, add cinnamon and nutmeg, and bananas. By now you should be able to flip the pancakes. Small bubbles should be rising to the top of the pancake. Pour a shot of whiskey into the saute pan with the banans and brown sugar mixture. Cautiously, preferably using a long stem bic lighter, ignite the pan. Remove pan from heat, and shake back and forth a few times until all flames extinguish. If desired, add walnuts and stir. Stack pancakes, and top with bananas whiskey foster. Serve with warmed maple syrup.
